I am by no means a gluten free nut, but 2 summers ago I did try one month without any gluten in my diet and it was wonderful. I’ve dealt with stomach issues since I was a little girl, so has my mom & her mom… and these issues still have yet to be explained/diagnosed, however, my month of no gluten made all the difference for me!
Gauge and I have started our journey back into health & fitness, which was where we both were when we met, and we’ve agreed to ease into incorporating no gluten into our diet. I posted a photo of these bars on my Instagram story and got so many messages from all of you wanting the recipe, so I am thrilled to share! 🙂
I originally found this recipe on a Whitney Simmons Youtube video, but I modified it & made it gluten free, just for funsies.
2 cups gluten free oats
1/2 cup gluten free flour
1 scoop vanilla protein powder (optional)
3/4 cup nut butter (I used almond butter) (and fun fact: I’m allergic to peanut butter) 😉
1/2 cup honey or agave (I used honey)
1/2 cup chocolate chips — the original recipe calls for mini chocolate chips, but I used the Ghirardelli 60% cacao chips (healthy-ish + delish)
* Milk of choice (as needed — I used almond milk)
* In my recipe I did not use vanilla protein powder.
Mix together rolled oats, gluten free flour, and a pinch of cinnamon. In a separate bowl, completely soften honey and almond butter (I had to put the bowl in the microwave for about 20 seconds). Pour the honey & almond butter into the bowl with the dry ingredients and mix thoroughly. *As you are mixing all of the ingredients, some of it may not stick together, so slowly add in milk until everything is mixed together & sticky. Fold in the chocolate chips. Place parchment paper in an 8×8 pan and press the batter into the pan so it lays evenly (you can use a spatula, but I definitely used my fingers LOL). Press more chocolate chips into the top once the batter is in the pan. Refrigerate & enjoy!
Side note — While I was eating this I started craving a banana, so next time I will replace the extra chocolate chips on top with banana slices. If you try it that way, let me know what you think!
